Salad Dressing Isn’t Just For (Boring) Salads

After you make this keto recipe, because you must, you’ll have lots of keto salad dressing sitting in your fridge waiting to be used. And maybe, you won’t feel like eating salad.

Keto Pasta sauce: Toss with zucchini noodles and top with fresh parsley + pumpkin seeds.

Keto Marinade: Add to a bag with raw meat or fish and marinade for up to 24 hours.

Keto Meat sauce: Drizzle over cooked chicken, chilled beef rib roast or pork chops.

Keto Egg topper: Mix in with scrambled eggs or drizzle over sunny side up eggs.

Keto Roasted vegetables: Roast vegetables to your liking and drizzle, or chill and toss.

I made this recipe with the keto-tastic BulletProof Brain Octane Oil but any of the above keto MCT oils would do the trick. Because MCT oil is virtually flavorless, you can have a lot of fun with it while cashing in on the keto health benefits, tablespoon by tablespoon. And in this case, keto salad by keto salad!

That’s okay, try my Vegan Caesar Salad recipe, with keto hemp heart Parmesan! It’s a raw keto salad dressing made creamy with avocado flesh and spiked with a couple of capers. Heck, even if you like anchovies but want a bit of a change, you should give it a go.

  • ¼ cup MCT oil
  • ¼ cup light flavored extra-virgin olive oil or avocado oil
  • 50g anchovy fillets, about 8 fillets
  • 2 tablespoons mayonnaise of your choice
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 2 cloves garlic
  • Pinch Himalayan rock salt
  • Ground pepper, to taste

Instructions

  1. Add all ingredients to the jug of your high-powered blender and blend on high for 1 minute, until smooth.
  2. Transfer to an airtight container (a mason jar would be perfect) and store for up to 5 days.
  3. When serving, dust the salad with a touch of nutritional yeast and hemp hearts, it’s delicious!

Notes MCT Oil: What is MCT oil? Learn about Keto MCTs here. If you do not wish to use MCT oil, additional olive oil can be used or flaxseed oil would be great, too!

Mayonnaise: any type of mayonnaise can be used here (watch out for ones made with yucky vegetable oils). I really like the taste that my Delectable Keto Bacon Mayonnaise adds to this recipe. If you do not wish to use mayonnaise, additional oil and a drop of white wine vinegar will do the trick. 3.5.3226
