I asked my followers on Facebook a couple of weeks ago what quinoa flake bake flavor I should come up with next.Although there was a strong following for carrot cake at first, snickerdoodle ended up sliding into first base.
A couple of tries later and I successfully landed on a cake that was perfectly sweet, dense, but not too hard, and resembled a cookie. Booya! Then I made it for myself 6 additional times just to be sure. It’s all about quality control, folks.;)
Print Snickerdoodle Quinoa Flake Bake Author: Leanne Vogel Recipe type: Gluten free, Dairy free, Refined sugar free, Yeast free, Corn free Prep time: Cook time: Total time: Serves: 1 serving A snickerdoodle inspired breakfast cake that’s high in protein and fiber. Best enjoyed with a hot cup of tea and topped with crushed flax and blueberries. Inspired by my Quinoa Flake Bakes Ingredients Dry
- ¼ cup quinoa flakes
- 1 tablespoon + 2 teaspoon coconut flour
- 1 tablespoon coconut sugar
- ¼ teaspoon baking soda
- ⅛ teaspoon himalayan rock salt
Wet
- 2 large eggs, at room temperature
- 1 tablespoon non-dairy milk
- 1 tablespoon extra virgin coconut oil
- 1 teaspoon pure vanilla extract
Topping:
- 1 teaspoon coconut/coconut sugar + ½ teaspoon ground cinnamon
Instructions
- Prepare a 16oz. microwave/oven safe dish by oiling with a dab of coconut oil. Set aside. Drop all ingredients except cinnamon sugar topping in a small bowl and mix until fully incorporated. Press mixture into prepare dish and even out with fork. Sprinkle cinnamon sugar over top.
- Microwave option: Place in the microwave and cook on level 6 power for 3-4 minutes. You’ll know when it’s done when it rises slightly, is harder to the touch, and pulls away from the sides of the dish. Don’t bake it too long, or you’ll have a Frisbee!
- Oven option: Place in a preheated oven at 350F and bake for 25-30 minutes, or until toothpick inserted comes out clean.
- Allow to rest for 1 minute before tipping over onto a plate and smothering with your favorite toppings.
3.3.3070 View Nutritional Information (once on page scroll down)The sprinkled flax you’re seeing is crushed flax from Omega Crunch. They naturally separate the shell from the germ of the flax seed making the omega-3 oils readily available. Whereas when you eat whole flax seed, there’s not much omega-3 absorption going on. This is unless the flax seed is ground, but who can snack on a bowl of ground flax seed? blahTheir product is so good you can eat it straight out of the container, something I do every night before bed.I just ordered a 2kg tub of their maple flax last week and can’t wait for it to arrive. $10 says it’ll be gone in less than a month.
Another product I have to chat about are Goody’s new(ish) spin pins. Have you tried them?I have really layered hair so there are a couple of pieces that just don’t fit into a bun naturally, but holy moly does this product work! I managed to keep this bun in my hair all day long and it didn’t budge.Spin pins and my bumpit – you may laugh, but I love that darn thing – make my morning hair routine a 2 minute event.
Ta-ta from the girl with an awesome updo… on a Tuesday!
