Print Good To The Core Stuffed Apple Dessert Author: Leanne Vogel Recipe type: Gluten-free, Refined sugar-free, Yeast-free, Corn-free, Grain-free, Egg-free Prep time: Cook time: Total time: Serves: 1 This dessert has all the goodness of apple pie, without all the effort. Ingredients Apple:- 1 gala apple
- ¼ cup water
Filling:
- 2 tablespoons raisins
- 2 tablespoons chopped pecans
- 1 teaspoon maple syrup
- ¼ teaspoon ground cinnamon
- Cream Cheese Drizzle:
- 2 tablespoons Happy Days Goat Cream Cheese Spread or dairy-free cream cheese
- 2 teaspoons maple syrup
- ¼ teaspoon vanilla extract
- ¼ teaspoon water
Instructions
- Preheat oven to 350F and fill a small, 2 cup casserole dish with the ¼ cup of water. Set aside.
- Core the apple using a melon baller or sharp knife, being sure to leave the bottom of the apple in tact so that it will hold the filling without leaking all over the place!
- Mix the filling ingredients together in a small bowl. Using a small spoon, scoop the filling into the apple.
- Place the stuffed apple in the prepared casserole dish. Cover with a glass cover.
- Bake for about 45-50 minutes, removing the cover after 20 minutes.
- Meanwhile, mix cream cheese drizzle ingredients in a small bowl. Once apple is cooked through, and tender, remove from the oven, place on a plate and drizzle with cream cheese mixture.
- Serve immediately.
Notes Cream Cheese – if you can’t do dairy, you can replace the cream cheese in this recipe with a dairy-free, store-bought cream cheese or make my Soy-free Vegan Cream Cheese. 3.2.2124
